I assume you mean what happened when a civil war solider ran out of ammo on the battle field? Most rifles at the time had bayonets attached to the front of the rifle (essentially a long knife) that would be used to stab enemy soldiers. The rifle could also be used as a club but that risked damaging the rifle. There have also been some accounts of soldiers firing their ramrods (remember these are front loading muskets, modern "ammo" had not yet become popular). It is also conceivable that you could in desperation use small rocks/stones, however if a rock/stone were to jam in the barrel during firing it could result in the destruction of the gun.

Other than that this is war so you fought with whatever was available.
