It depends what religion you were before rejecting Islam when your land was conquered by the Muslims. If you were a polytheist of some variety or an Atheist and rejected conversion, you would be guilty of blasphemy and face execution. If you were a Jew, Christian, or Sabian and rejected conversion, you would become a second-class citizen called a Dhimmi. If you were a Muslim and rejected the religion (i.e. you left Islam), you would be found guilty of apostasy and face execution. Thankfully, the executions were not always practiced, but the law was never changed (there was simply lax application).

If you rejected Islam in a Non-Islamic country, nothing would happen to you.
