Your hair will get greasy much quicker than it normally would. An it will be hard to brush out but there is no real damage done if you don't rinse your hair properly.
The excess shampoo left in the hair may also cause irritation to the scalp.

Unless you were burning something synthetic or sticky, ash should wash out of the hair with a little shampoo or soap.
If your hair is thin and you want some volume, you can use volumizing shampoo and conditioner. After that you can also tease/backcomb your hair for lift and spray a little bit of hair spray on it so it stays in place. You can also also use volumizing mousse and other products that thickens your hair and add volume and bounce at the same time.
Your hair loss is not related to the brand of shampoo that you are using. Shampoo companies would like us to believe that their products will guarantee beautiful and abundant hair, but actually shampoo does very little more than clean your hair, and all shampoos are based on exactly the same form of liquid soap (made from sodium lauryl sulfate and/or sodium laureth sulfate) and they all do the same thing. The innumberable additives which make each brand of shampoo unique generally do very little. There are emolients that make the hair softer, and perfumes which make the hair fragrant, and that is pretty much it. Nothing in shampoo will either cause your hair to fall out faster, or prevent it from falling out. Therefore, it doesn't really matter which shampoo you use. Use which ever you like.
