It depends on the nature of their non-acceptance. If they accepted Islamic rulership, but did not convert to the religion of Islam, they were called Ahl ad-Dhimma, meaning "Protected People". A subset of the Ahl ad-Dhimma were also called Ahl al-Kitaab, meaning "People of the Book" and usually used in reference to Jews and Christians. If they did not accept Islamic rulership or the religion of Islam, they were called "Unbelievers" or "Infidels". The Arabic term used was typically, Kuffar, meaning "those who deny the Truth about God".
Some certainly did and converted to Islam. However, those Jews who remain Jews will accept the right for Muslims to profess Islam, but will consider those views incorrect for themselves.

There are two major groups of individuals who do not accept Islam as their religion. 1) Those who have a different religion whose values they hold and are willing to defend. 2) Those who reject all forms of supernatural beliefs.
The warrior for Islam is the one who defends himself, his religion, his home land, his family, and/or his native people against foreign invaders and attackers.
People were invited to embrace Islam. Those who did not want to become Muslims were left to go in peace.

Islam does not bind its followers in each and every petty matter of life. Islam sets certain parameters. Within those parameters certain things are halal, some are Makrooh (detesting, abhorant), certain things are against human nature which should be avoided, if no utterly Haram. What is strange about such questions is human nature. Islam is based on human nature-that is very poise, beautiful, sophisticated, and refined. It has a lot to do with aesthetic sense. How can a man having aesthetic sense pollute his sacred mouth by licking such a filthy place? It is Satanic, Devilish, abhoring and detesting.
