Probably the same thing that would happen if a meteoroid hit Mars or Venus; we probably wouldn't know about it. It would probably make a crater, depending on how big it was and how fast it was going.
But because Pluto's mass is fairly low, its gravity is ALSO pretty low (0.067g) and being that far away from the Sun, the meteoroid would probably be moving fairly slowly, anyway. A meteoroid would probably "bump" into Pluto more that it would "hit" it.
