The substance goes from being a liquid to being a gas.

The difference in terms of the molecules is that in a gas, the intermolecular forces are all broken and each molecule is not attracted to the other neighboring molecules. The molecules in the gas phase are free to move about in air.

A common example of this is water turning to steam when it boils. Steam is just water in the gas phase.

In a liquid, there are still attractive forces between molecules, but not as much as in a solid, where the stronger intermolecular forces keeps the substance hard and rigid.
