Cut flowers are still able to absorb water when placed in a vase as long as the xylem and phloem vessels are open and not clogged/ blocked by dead plant tissue and debris.

Any dye that is placed in the water will be absorbed up through the stem and move through the plant tissue (translocation) where it will collect or be deposited.

This dye coloring is then visible in the flower when we look at it; sometimes the entire flower can become colored, sometimes only portions colored - especially if some of the xylem vessels are damaged or blocked and no water is transported through them.

White flowers are normally used to colour artificially as the dye coloring does not always show clearly against darker colored coloured flowers (i.e. those that have a naturally darker coloring)

Colored water is carried upward through the stem via capillary action. This also carries the dye in the water which then stains the cell walls of the petals, causing the flowers to take on the hue of the dye.

Some white flowers will change color when put into a dye solution. Most notable among the white flowers that do this are carnations. They are routinely dyed green and sold for St. Patrick's day. I've seen some wildly colored poinsettias this year that I can only assume were white dyed flowers.

if you put white carnations in a vase with cold water and a couple drops of food coloring then the petals with turn the color of the food coloring.....

ex: 1 white carnation+a vase+red food coloring+cold water=red carnation

The flowers absorb water into their tissues. Since the cells of the flower are a mixture of water and solutes, they are less concentrated than the pure water (or, at least relatively pure) in the container. So, water will flow into the flower. For an experiment, put flowers into a solution of water and salt. If the salt concentration is high enough, water will flow OUT of the flowers.
