By dancing I assume you mean performance horses using advanced dressage skills to music.
Any horse, with the correct teacher, can be taught to 'dance.'
However it takes time, precision and a lot of expertise or it will be very unpleasant for the trainer and the horse.
Undoubtedly the most popular horse breeds for performance are Andalusian, Lipizzaner and Friesian, due to their intelligence and beautiful looks.

-Drafts, because they have rough joints and they won't move nicely because of that
-Young horses (2-3 yrs) Because they need to be ridden and saddled first
-Racehorses: Are warm blooded and nervous sometimes, so they gonna loose concentration

-Jumpers or dressage horses with nice motile legs
-Admirably built horses, they will impress people
-Unusually and rarely colored horses, like pintos will knock public DOWN
Tips and tricks:
-Let horse's mane ant tail grow. It looks majestic!
-When learning horse to dance, try with voice commands. Horse will get used to it and listen.
-Reward your horse when it does something nicely - it will learn it profits to be nice, but if it later teases you to get sweets don't give them to horse.
-When learning to dance ad horse doesn't have a clue what you want, don't freak out, you'll just make horse more nervous.
- Choose a music you like and learn your horse to dance on it. When you turn the music on and it starts to dance without the command that means it is trained enough.
- More your trainings are interesting to horse, it will like to go training
