I like to think of dreams as ways for your brain to practice for future experiences. In terms of survival and learning, if you've already experienced something once its pretty likely that you'll be more successful the next time you experience it, so I believe they serve as a biological survival mechanism.
I think dreams often reflect the things that concern you the most. If you're dreaming of someone every night it's likely you're wondering something about that person, it could be anything. You should observe what may be thematic in these dreams, maybe try to access the feelings associated with what's happening when you wake up.
If it really bothers you, start keeping a dream journal so that you can really investigate.
