The potato is a large root (tuber) made of starch stored by the potato plant. It is designed to feed the "eyes" or sprouting nodes that would re-emerge when spring comes.
Inside the potato is tissues, cells, and starch. Potatoes have an internal structure called the medullar layer.
Edible nutrients. All of the potato is edible - lots of Vitamin B in the skin.

Potatoes are a good source of potassium. The vegetable is not called "potassium potatoes," but white potatoes, Idaho potatoes, Yukon gold potatoes, new potatoes, red potatoes, and so forth.
Some potatoes are, but not all potatoes are grown in Idaho.
If they really are Sweet Potatoes (and not some local variant called a sweet potatoe that is actually a completely different tuber), yes you can.
More than likely, you have an eye that is sprouting. This is how a potato grows roots and above the ground stems. You can cut these growth areas out and plant them in the ground in the spring or summer and grow more potatoes.
