To the Hebrew mind, numbers have more significance than just the value we would ascribe to them. Each number is linked to a letter in the Hebrew Alphabet, and each number / letter has a particular symbolism. I don't have my reference material on hand right now, but from memory the number 40 is a combination of 4 and 10. These numbers both refer to completion, fullness and perfection. So when you see 40 days and 40 nights (or 40 years), it will most often be speaking of a particular event (eg. The Flood and Noah's Ark, raining for 40 days and 40 nights would be understood as raining until the whole earth was flooded)
