Demeter is the goddess of the harvest and in Greek myth, she presides over the grains and the fertility of the earth. She isn't the goddess of animals per se but she does have sacred animal symbols, as do many of the Greek gods and goddesses. In the case of Demeter, her animals are commonly pigs and serpents A better fit for the goddess of animals may be Artemis, the goddess of the hunt, the wild, and animals.
