As related by Dennis D. Jacobs in his marvelous book "More or Less Loess," the Eskimo Pie was invented in Onawa, Iowa by Christian K. Nelson. According to legend, a small boy came into Nelson's candy store in Onawa one day in 1921 and couldn't decide between spending his nickel on ice cream or a chocolate bar. Nelson was inspired to try to combine the two treats, but he had difficulty getting the chocolate to stick to the ice cream. A candy salesman told him to try using cocoa butter to connect them and that did the trick. Nelson called them I-Scream-Bars, but when he joined forces to market them with Russell Stover, the famous candy maker suggested the name Eskimo Pie. The rest is history.
