It is a tradition in the UK royal family, that when a member gets married, they are given a new title. Since there had been no Duke of Cambridge since Prince George, who died in 1859, the Queen decided to reissue the title.

Prince William has not lost his title as prince. The duke of york still retains his title as prince Andrew however it is common for the queen to give other titles to royal members when they marry. When William married Catherine she automatically receives the title princess William but they will be officially known as the duke and duchess of Cambridge. Also a duke is higher than a prince.

Checking this list of ancestors,(website below), reveals that her parents and all grandparents for whom there are records [back to great(x 4)] were married in Anglican churches. That suggests that if the Middletons are religious at all, they are probably Anglican.
