Having just read the book I don't think that Simon was ever "continually" reminded of anything. I think you might be refering to one particular passage in chapter 6, which I'll quote directly.... Simon, walking in front of Ralph, felt a flicker of incredulity --a beast with claws that scratched, that sat on a mountain-top, that left no tracks and yet was not fast enough to catch Samneric. However Simon thought of the beast, there rose before his inward sight the picture of a human at once heroic and sick.

Simon does not destroy the beast because the beast is not a creature or a being, it is the 'darkness within' everyone, the potential and desire to do evil. Simon knew this instinctively which is why he said at a meeting, perhaps there is a beast, perhaps it is us. Simon climbed the mountain and untangled the dead parachustist's guide lines from the rocks, not in an attempt to destroy anything but simply to allow the dead body to lay at rest. If Simon had been allowed to tell the other boys that there was no beast on the mountain, just a dead body, he might have destroyed the power of 'the beast' but ironically he was mistaken for the beast himself and beaten to death and only added more fuel to the growing beast mythology.

Simon knew in his heart that the best did not exist in a true physical manifestation, which is what the sow's head, or the Lord of the Flies, is a representation of. However, Simon being the spiritual being that he was he interpreted the beast as something emotional in every single one of the kids. He is, infact, the kid that ends up discovery the dead parachuter and the only person that knows the truth behind the beast.
