Generally East Texas refers to the eastern part of Texas, which is covered, or used to be covered, by what is called the Piney Woods. If you imagine a line drawn from Longview down through Huntsville, then eastward to Houston and on over to the Louisiana border, then all the territory in that area is known as East Texas. That is only generally-speaking, because the definition changes, depending on the person... I don't even consider Huntsville a part of East Texas, really, although Huntsville does. And definitely not Dallas. Another might say that everything east of Highway 59 is East Texas over to the Louisiana border, and some would include only northeast Texas, which we often refer to as Deep East Texas - Nacogdoches, Center, Marshall, etc. Depends on your viewpoint - I don't think there's any official pronouncement on the definition of East Texas.
