There are two paddles attached to the wheel on an F1 car. Tapping the right one changes up, the left changes down.

It is probably that you're using a manual transmission and you moved from 1st gear to 2nd gear without going to the minumin speed and power. Start the motor and then put it in gear. Point it down hill and release the brakes
The reason to gear lock in park mode is so you're car wont roll back if your parked on a hill. If your e-brake cable snaps, the car will stop itself from rolling because its in a gear lock. Just make sure when you start you car to keep your foot down on the clutch until you but your car netruel.
It's an automatic. Leave it in "Drive" and the car will pick a suitable gear all by itself.
