The process begins in the the districts of each state that have been designate to be a caucus state. (I don't think all 50 states are caucus states, and I believe it may vary from party to party) In each district, 15 "delegates" (local citizens who apply to represent their political party) and 15 "Alternates" (local citizens who may be granted delegate responsibilities in the absence of a delegate) will be elected from a pool of many by the registered party voters of that district to the State Convention.
Once at the State Convention, each of these groups of 15 will narrow their group down to 3, and proceed to the Nation Convention. At this point, these delegates are not bound by law to any particular candidate.
Apart from nominating a candidate for President and Vice President, National Convention usually is responsible for crafting an official party platform and political agenda for the next four years. The actual number of Delegates at the National Convention may differ every election season, and may differ by political party.
