I'm not certain if there's a general name for cylindrical biscuits, or cookies.

Some biscuits are made from dough which is rolled into a cylindrical, or sausage, shape and then sliced into rounds before baking. Some doughs are rolled into thin cylinders and coiled before baking. Also, some biscuits are rolled into short cylinders and then baked, either first twisted or left plain. Twists can include more than one color dough.

Brandy snaps are biscuits made from a batter lightly flavoured with ginger and baked; while still soft they're rolled around a wooden spoon handle or piece of dowel (a cylinder of wood, available in different diameters from hardware stores, cut to length required). The resulting hollow cylinder is allowed to cool and then filled with whipped pure cream for a delicious combination of chewy-crisp, sweet, lacy biscuit and smooth, cool cream.

Ignore recipes which tell you to wrap the biscuit around a broom handle - it's too thick, and trying to manipulate a broom handle in your kitchen can lead to damaged breakables and very annoyed people.

The cream can be flavored with brandy or whiskey. Brandy snaps can also be made into small basket-shapes by molding in a patty-pan after baking; the cups are filled when cold with fresh fruit, cream, whatever you like.

Brandy snaps can be bought ready-made in supermarkets.
