I haven't heard of a 'door removable mullion' but a door with a removeable mullion is a double doorset with a post which each leaf closes on to. The idea of the mullion can be for several reasons, the most common being for acoustic performance and security. Back to the removable mullion part, this is so that the post can be removed for passing large objects through e.g. a grand piano.
If you used screws instead of nails when you assembled it, you could take it apart. But I' can't imagine the application, what is it you're trying to do?
