Yes, your topic and the stand you take toward that topic can make your essay easy or difficult to write. Some topics have a lot you can say about them and others are hard to write about.

Nobody can write your topic sentence but you. We don't know what you're going to write in your essay. Your topic sentence should tell what your essay will be about. One easy way to get a good topic sentence is just to write the essay first, then go back and make a great topic sentence once you're finished.
Move the topic sentence if it will make it easy for the reader to follow what's going on. You need to be sure that the sentence is still supported by the other sentences, which now lead up to the topic instead of following it.

Collect your thoughts, possibly do any necessary research (which, on the internet, is extremely easy to do) and decide what you want to say about the topic of your informal essay, and then say it. Then re-read what you wrote and see if you can phrase it more perfectly. That's pretty much it.
You can, if it's an informal or opinionated essay, or an essay deliberately written in that style. However, if more formal essays it's best to use 'one'. If that sounds awkward remove the subject altogether. e.g.: You can find the Great Wall in China. One can find the Great Wall in China. The Great Wall is found in China.
