Well, this is somewhat vague because there are many parts of poetry. Poetry grouped into paragraph type structures have "stanzas." Each paragraph is called a stanza. If it is a two line stanza, it's a couplet. If the stanza consist of 3 lines, it is considered a tercet. Stanzas are a format more than a part, however.

Parts of poetry could also include literary devices and figurative language.

Among major structural elements used in poetry are the line, the stanza or verse paragraph, and larger combinations of stanzas or lines such as cantos. Also sometimes used are broader visual presentations of words and calligraphy.
