Something that is on the topic the course is about of course. But beyond that I would always pick one of two options: first option was to write about something I'm passionate about, something I really cared about. This would motivate me to do the paper and get it done. Second option was to write the essay about something I'm curious about, something I'd like to know more about. The curiousity was usually enough to push me on through to finish the paper even if at the end I didn't like the topic. It was a benefit in the long run cause I now knew I didn't want anything to do with that topic again.
The thing is to get words on paper, specifically your words. The essay is just that, your words.

If you have a topic sentence re-write the topic sentence in the ending and don't pull in any facts!
Be precise in how you write it and make sure you have good literature skills so your teacher or professor can understand how you are explaining your topic
