What are the different stages of hajji?

It is not that simple and requires in depth knowledge. First of all you need to know that there are 3 types of Haj: Haj Ifrad, Haj Qiran and Haj Tamattu so you have to make intention for one of these Haj. In Haj Ifrad you only do simple Haj and it is only for the residents of Makkah city. In the other two types of Haj one has to do Umrah and then Haj. Once you have done Umrah you proceed for Haj as follow: Day 1: 8th Zul-Hijah After Fajir salat (morning prayers) leave Makkah to go to Mina and spend day and night in Mina. Recite Talbiyyah(Labaik...) during the journey. Spend rest of the time in praying and Dua. Day 2: After Fajir salat (morning prayers) start reciting Takbeer Tashreek(Allaho Akbar Allaho Akbar Laa ilaha illallahu Wallaho Akbar Allaho Akbar Walill lahil Hamd) after every prayer until Asr salat (late afternoon prayer)of the 6th day of Haj. You now make your way to Arafaat reciting Labaik..Labaik.... on the journey. In Arafat do the Zohar and Asr salat (noon and late afternoon prayers) at the allotted time and read the Koran and all dua's and ask for forgiveness and mercy till sunset. You then go to Muzadalfah mountains and perform the Maghrib and Isha salat (evening and night prayers) combined together. Collect 49 pepples for Rami (for stoning) and sleep in your sleeping bags. Day 3: After Fajar (morning) prayer you leave for Mina and perform Rami i.e. stoning of the big Jamaret 7 pebbles. You recite Bismillah Allo Akbar when you throw each pebbles. You then do Qurbani (sacrifice) and once this is done you do Halaq, ie shaving of your hair. You can now have a shower and take off your Ihraam, put ordinary clothes, and later go to Makkah to perform Twaf Ziyarah (going around the Kaaba anticlockwise 7 times). If you have not done Sa'ee (walking between Safa and Marwah mountains) before Haj, you need to do Sa'ee. If you have done Umrah before Haj you do not do Sa'ee again but return to spend night in Mina. Day 4: You need to go for Rami between Zawal (after noon)and Maghrib (sunset) and do Rami i.e. stoning all the Jamaret 7 pebbles each starting from the small, medium and large Jamarat. Recite Bismillah Allah o Akbar each time you throw the stone. Spend the day and night in Mina. Day 5: Perform Rami again i.e. stoning all the Jamaret 7 pebbles each starting from the small, medium and large Jamaret. Recite Bismillah Allah o Akbar each time you throw the stone. Try to do the Rami before Maghrib (sunset) and leave for Makkah. If you do Rami after Maghrib(sunset) or have stayed in Mina after Maghrib, you have to do Rami of all three Jamarats again on the next day before going to Makkah. Your Haj is now complete. In Makkah you then do Twaf again (going round the Kaaba anticlockwise7 times) just before departure from Makkah. After Haj is over the Pilgrims usually travel to Madina to stay and pray at the Prophet's Masjid Nabi in Madina city. Some Tour operator to avoid over crowding take the Pilgrims first to Madina and they then come to Makkah city to do Umrah and Haj, in which case they return home after completing the Haj.
