All devices for measuring temperature are called thermometers. This includes those which use Mercury and measure the temperature of the air.

Look at an ordinary thermometer. You will see the mercury or achohol inside, and you will see regular degree markings along the thermometer. As the mercury or alchohol changes temperature, it expands and contracts.
In this answer I m referring to the normal thermometers. Not the electronic thermometers. There is a very very thin capillary tube incide the thermometer which is filled with mercury and it has a bulb aT one end. When it touches a surface, the mercury expands, rises in the capillary and the temperature is shown.

These are called bi-metalic coils (two different metals stuck tightly together), which expand and contract at different rates when the temperature changes, thus coiling tighter or looser causing the glass tube filled with mercury to shift to the right or left to make or break the low voltage (~24volts usually) electrical connection, causing the air conditioner or heater to turn on and turn off when the temperature changes.

Mercury is a shiny liquid (a liquid metal) so it can be easily seen through the glass tube. Other liquid like water are transparent. 2. Mercury is very heavy. So only 76cms of it rises in the tube. Had you been using water for the purpose, you would need a glass tube as long as 55ft. 3. Mercury does not stick to the glass surface inside, so the reading obtained is much more accurate and precise. Remember: Water droplets stick to glass.

Traditional thermometers are filled with red-dyed alcohol while others are filled with mercury which appears silver in color. Mercury thermometers aren't safe. When a mercury thermometer breaks on the floor mercury is released. Mercury is very toxic and venomous. One sole drop can kill you or make you very sick. Alcohol is dyed red to add more visibility. Otherwise it'll be very hard to read the temperature due to the alcohol's transparency.
