The largest producers are Thomy, Develey, and Löwensenf they manufacture a wide range of mustards from the mild sweet mustards to the extra stonrg toungue burners.
There are a few dozen smaller local companies who produce specialised mustards to compliment the local delicacies.
The so called "Sußersenf" (sweet mustard) originated in Bavaria, where as the stonger versions were derived in central and northern Germany.
