The horse might sake it head or toss it head around. They might drink a lot more water then usual and when you put a bite in the horses mouth the horse may jerk more, or when riding the horse might pull on the bit and toss it head. Sometimes its better to check the horses mouth for abscess or puss where a wound might be.
A horse's mouth lathers because it is usually do to relaxation of their jaw. It can also be a sign of tension and damage to the horses internal system ( Usually only seen in rollkur trained horses).
English horses don't exactly need a noseband and it doesn't tie their mouths shut. It gives more control to the rider but, I ride an English horse and he doesn't have a noseband beccause it hurts his nose.
