The difference in texture is really based on when you are feeling the snow. Right after a snowfall, the snow is fluffy. Then the snow hardens.

While the 20 gauge is a all around excellent size for rabbits to partridge,I for one would not use this for snow goose,or any other bird of that size.There can be long shots that a 20 gauge just does not have the power to reach,and the amount of shot in a 20 gauge round is going to put you at a serious disadvantage to kill these geese cleanly.I would stick with a 12 gauge for such hunting applications.
