Most female sheep do not get altered. But, I'm assuming, either way, they're known as "ewes" (pronounced "you's"). However, altered males are far more common because it is much easier to castrate a ram lamb than spay a ewe lamb (mainly because you can do it right on site rather than go to a veterinary clinic and have it done). Altered males are called "wethers" (pronounced "weh-theirs") and in-tact males are called rams.
