Most people start out with a pineapple doily if using thread. If using yarn most people start out making a ripple afghan.

I get many questions from people having trouble with the ripple so I would not suggest it as a first yarn pattern to work. The simplest pattern would be working one stitch along your row until you are comfortable with it. For example, making a dishcloth or potholder in single crochet. Or a double crochet scarf. I have been crocheting for almost 30 years and one of my favorite projects is still a simple dc scarf. You can vary the work to make it more interesting by working in the back loop of the stitch which gives a pretty ridge. It's still simple to do, but looks a bit fancier. You can use a project like that to practice changing colors too.

If you are already experienced with crochet, but just looking for an easy pattern to work, that depends on what type of pattern you are looking for. Afghan, scarf, hat, or whatever. Can you work in the round? Granny squares can be used in a variety of ways to make many different items.
