In my opinion, Rock and Roll would be very opposite of Latin Jazz because Rock and Roll usually has simple time signatures like 4/4 or 3/4, where as Latin Jazz often (thought not always) doesn't have a simple time signature, and often it doesn't have an under-beat at all. Especially for Afro-Cuban jazz, at a live show, the audience will not always clap "1-2-3-4...1-2-3-4...etc..." but they will be clapping the syncopated rhythms from the percussion section, and this rythm is what the soloists follow when improvising. Today's popular music in general is also very unlike Latin Jazz in most cases.
