In brief, an analytical test aims to test a compound for the quantity of a substance (most often). In order to carry out an analaytical test, you first need to have an idea what you want to test for. Be it a specific metal, an impurity, an ion (can be easily done qualitatively), an organic compound etc.

Simplified, analytical chemistry to me means that if you give me something, I can tell you what is in it, how much is in it, and sometimes required, the statistics behind it.
