I think you mean to play a latin beat...sorry if I assumed incorrectly.
But if I'm correct then it means to play a drum beat using the "clave" patterns such as
the "Son Clave", "Rumba Clave", and "Bossa Clave" which can all three be played in
2/3 or 3/2 (2/3 reffering to two hits in the first measure and three hits in the second
measure, not the time signature). The time signature can be 4/4 or 6/8 for these
rhythms, but I've most commonly seen them in 4/4 time.
You can learn more about these rhthms on YouTube if you have it, go to the main menu
and type "drumlessons.com" and look for "claves" or something like that.
You can also go to "drumstyles.com" it might have something on there about the clave
patterns.

The saying usually is: Born to the beat of a "differant" drum. It is from a marching image - when people march they must follow the beat of the drum or they will get out of step with the others. When someone says "beat of a different drum" it means you are an individual who does not automatically follow what the majority does. It is usually a compliment.
