What is difference between blanchbait and whitebait?
Blanchbait/Blanchebait (which is a trade name) is produced using lake smelt, (a freshwater fish, atherinadae or osmerus species) which is then coated in breadcrumbs. These fish, from a sustainability point of view, (confirmed on the IUCN redlist) are in the category of "least concern."Whitebait, according to the Food Standards Agency (UK) Commercial Designations of Fish list is Small Clupea harengus or Small Sprattus sprattus. Small is not defined.
