Excel has built in formats that you can use, but you can also specify your own ones. Those are the Custom formats. So you can do things like get a date to show the name of the day in words; change the colour of positive and negative numbers, show special characters in a value and many other things.
While Microsoft Office is not available on Unix-like systems, you can use other offices suites to open the Excel file format. Consider trying LibreOffice or OpenOffice.org; both are excellent open-source office suites that support most Microsoft Office file formats.
