Carbon monoxide poisoning happens when CO is absorbed into the haemoglobin rather than oxygen. The carboxyhaemoglobin is more stable than the oxyhaemolobin and essentially takes the haemoglobin "out of service" as a medium for transferring oxygen to the cells.
