Cold packing peaches.

After skinning the peaches ( pour boiling water over ripe peaches, and the skins will slip right off ), then cut the peaches in half. ( Some people prefer to add ascorbic acid as a preservative. This is up to you. Be sure to cut out any bruises. Fill your canning jars ( after sterilizing the jar, as well as lids and rings ) with the peaches up to the neck of the jar. Cover with sugar syrup leaving 1/2 inch head space ( see below for recipe ). Insert a knife into the jar to remove air bubbles, then wipe the necks and lips of the jars, place lid and ring on the jar, and process in either a hot water bath canner, or a pressure canner.

To hot pack you would bring the peaches to a boil with sugar syrup and fill the jars. I hot pack tomatoes and pumpkin, and cold pack fruits.

Sugar Syrup -

In a pan, bring to a boil sugar and water . . .

For a light syrup, use 1 part sugar and 4 parts water

For a medium syrup, use 2 parts sugar and 4 parts water.

For a heavy syrup, use 1 part sugar to 1 part water. ( Equal amounts )
