They are the bacterium cultures used to ripen the milk. The two primary culture types, Mesophillic and Thermophillic do the same job but at different operating temperatures. Mesophillic is preferred in 'hard' cheese making. They are direct-to-vat pure strain initiators which require no prior preparation of the milk. They are concentrated, abundant and vigorous, making them economical in use.
