It really depends on the contractors preference and also availability of those sub-trades. Not every specialist can come on the exact day you would like. I personally like to get the drywall and mudding done first. That way the doors are kept in pristine condition to be installed later.

You didn't prime it first - big no-no !
If the seats or carpeting is wet remove those pieces.then open the doors and let a fan blow thru the car to remove any water. Also do the same with the carpet,hang it up somewhere and let a fan blow on it until it's dry.
