In omniscient writing you are a detached presence which sees everything and knows the mind state of all the characters (not applicable to first person).

If you described emergency immersion in cold water in subjective way it would be: I'm cold, I'm shaking uncontrollably, my fingers ache with it and there are spikes of pain in my lungs as I breath in huge trembling sobs. I'm scared.

If I attempt this in an objective way using "show don't tell" it might look something like this: There are chunks of ice in the water, my body is shaking uncontrollably and my jerky breaths are making sharp ripples on the surface.
