As with any acid the funciton of HCl is to lower the pH. In the stomach this function is used to create an environment within which the zymogen (innactive protein precurser)pepsinogen can autocleave to form pepsin. Pepsin is the active form that is capable of breaking down proteins into oligopeptides.
