(That was part of an old joke) A person who speaks: three (or more) languages is a polyglot; two languages is bilingual; and only one language is... an American.

People who can speak many languages are called polyglots or multi-lingual.
Multilingual is the main one. Polyglot refers to someone who has mastered a number of languages.
"Trilingual" refers to someone who can speak three languages fluently.

A person with two languages is bilingual. A person with three or more is multilingual. Looking for a word that describes the exact number of languages would seem disingenuous.
