First you type it and then you can press the Enter key or the Return key, which will put the text into the cell. You can also type it and click on the little green tick character on the formula bar to put it into the cell.

The default alignment for text is left aligned. You can centre the text after it is entered. You can also set the formatting to be centred before entering anything. Then when text is typed into the cell it will be centred.
