Kebab Meat is traditionally beef, lamb (mutton), chicken, and/or even veal that is arranged in a cylindrical fashion on a large skewer that turns in front of a heat source. It is cut and served as it cooks. Traditionally an middle-eastern food, kebabs were never made of pork because this violates Muslim dietary restrictions, but as non-Muslims adapt the food, pork is becoming less rare (especially in France), but is still far from common.
