Our pool installer told us to wet down our gunite once in the morning and once in the evening for seven full days after the gunite is installed.

If the cement had cured enough to maintain its shape IE not get washed away by the running water, The water on top of it should do no harm as a matter of fact it will slow down the cure and make the pool stronger in the long run.
Gunite can last for decades with good soil conditions. Plaster is the part that needs to be redone periodically, but maintaining proper chemistry will allow your plaster to last much longer.
According to an ad for a fiberglass pool company, it is because of the abrasiveness of gunite and for being in the pool too long. I am still looking for other answers and solutions to this question as well.
