SPDT stands for "single pole double throw". "Double Throw" means it has 1 input and 2 outputs. That is, you can use it to turn on one or the other of two different lights depending on which direction you switch it.

You can also wire it the opposite way, in which case it has two inputs and one output.

"Single Pole" means you're switching one line. This may, or may not, be sufficient. For example, in household wiring there's generally no (or very little) downside to leaving the neutral wire permanently "on" and just switching the "hot" wire (in fact, this may be better, because if you're switching both the hot and neutral lines and something goes wrong with the "neutral" side of the switch, you could be left with a live "hot" wire with no safe return path to ground).
