A microprocessor is any computer with all ALU & control unit functions integrated into a single chip (or a very small number of chips). Microcontrollers are specialized microprocessors that also have memory and sometimes part of the I/O functions integrated into the chip too.

Their main evolution has been to get higher performance and support for more memory. Even the simplest and least expensive microprocessor today has the ability to perform tasks far beyond the abilities of the fastest and most expensive supercomputers built in the 1970s.
