A science fair project should attempt to answer a question or test a theory.
You than document the steps that you took to answer your question or test the theory.
When possible you can also recreate the experiment on site. For longer tests you would only present the end result along with pictures and documentation of previous steps.
Despite silly suggestions from other people, a volcano is not a good science project. It does not answer any questions or test any theories, it just shows that you can build a model which may be fine for show and tell but serves no purpose in a science fair.
