Old beliefs and practices are generally based on results and observations of the past, although some of the reasons for believing these things may have been lost. It could turn out that they are true, or mostly true, but need updating, standardization or clarification in order to be applicable today. Most previous reasoning is built off of reasoning of the past. Further, if you outright dismiss old beliefs and practices, you miss the chance to connect with those who fervently believe these old beliefs and practices, and may further entrench them, instead of helping them adapt their beliefs.
