Succulency
Any plant one sees growing in the desert doesn't need much water to survive. A plant requiring lots of water just does not grow in a desert. This includes succulents such as cacti, agaves and aloes, yuccas, ocotillos, some trees and shrubs, certain grasses and other smaller plants.

It has no leaves, which means that water (which there is a shortage of in the desert [believe it or not]) can travel straight to the roots of the plant.
There are a variety of plants called succulents that live in the deserts, plants that can store water in their tissues. One group of succulent plants are the cacti.

The plant that needs little water and grows well in Arizona's deserts is the desert-adapted succulent called the agave. Agave plants are drought-tolerant and thrive in the arid conditions of the desert. They store water in their thick leaves, allowing them to withstand long periods of dryness.
It depends on how severe the lack of water or excess of water is. Neither will be healthy and both will eventually die if the situation is severe enough.
One gallon of water in the summer would last a person about one day in a hot desert.
